You manage data flows from the Admin → Data flow list. Use the Edit icon to change general settings and the Configure icon to change type-specific settings. The model is described in Data flows.
When creating a data flow

The name displayed in the list and in emails

The data flow type, which defines what it does. Cannot be changed after creation
